Brazilian Sampling - Greens Mineira

  • 6 Slices Bacon, coarsely chopped
  • 2 cups Water
  • 1 lb Collard Greens, trimmed, washed and thinly chopped
  • dash Sugar
  • 1 T Olive Oil
  • 1/2 t Liquid Smoke
  • Salt



1) Render bacon until crispy. Remove and set aside.


2) To rapidly boiling water add collard greens, sugar and salt. Cook until tender. Drain and toss with bacon, olive oil and liquid smoke.
